Here are some tips to follow when attending your wedding catering menu tasting.
Pay attention to how filling the samples are
In addition to evaluating the flavours of the dishes, you should also pay attention to how filling the dishes are. For example, the portions of food wedding caterers serve at menu tastings are usually modest. If you take just two or three small bites of a particularly rich dish and find that, whilst it's tasty, it feels very heavy in your stomach and leaves you feeling surprisingly full, you should keep this in mind when deciding if it's suitable for the wedding.
The reason for this is that a wedding meal should be delicious, satisfying and satiating but not so filling that it leaves guests bloated and sleepy. After all, the dinner is just the beginning of the wedding reception, and you'll want your guests to stay awake and energised for the remainder of the celebrations.
If there is a dish that you notice is very filling but is so delicious that you still want to serve it, you should request that the wedding caterer make it in tiny portions, in the form of amuse-bouche that could be served at the start of the meal. This will allow the guests to taste its wonderful flavours without filling up too much.
Consider dividing the tasting process into two sessions if you're interested in lots of dishes
If you and your partner don't quite know which dishes you want and the wedding caterer has offered to make a lot of dishes that all sound appealing to you, you should consider splitting the tasting process into two sessions.
The reason for this is that if you try 25 samples in one tasting session, you won't be able to properly evaluate the final few samples, as you'll already be full and the last two or three that you consume might make you feel nauseous, even if the caterer has prepared them perfectly. Likewise, if you've tasted several very spicy dishes and then you taste a dish that has no spice and far subtler flavours, your overstimulated palette might lead to you being unable to appreciate these milder, but equally tasty flavours. This could then result in you not picking the right dishes for your wedding or choosing a combination of dishes that don't truly complement each other. Dividing up the menu tasting into a couple of sessions should prevent you from getting overly full and should ensure you can appreciate every sample dish the caterer offers you.
